SAKU SUSHI GRADE

Tuna Saku comes in a variety of sizes, from narrow to wide cuts. It is cut from the center of the tuna loin and is often considered the leanest, best tasting part of the whole tuna! Commonly used for Sashimi, Nigiri, or Seared Tuna dishes.

Our Tuna Ground is processed with a minimal amount of sugi/sinew, which provides a better texture and eating experience for your sushi rolls, tuna tartare, spicy tuna, and tuna burger patties.
